When choosing a muddler, you do not want one that is varnished, or lacquered, as it can come off in your drink. You also do not want a muddler that has teeth, as they will crush or shred your herbs and citrus.
If you have never used a muddler before, you may be a bit aprehensive. As I was when I first started bar tending and a customer ordered a Mojito. Here are a few steps to ensure that you get the right outcome:
● Make sure that you have a sturdy glass. To thin of a glass and you could chip it while muddling.
● Put the leaves in the bottom of the glass, add a teaspoon or so of sugar. Press down lightly on the leaves. Just a few gentle twists. 4 or under should be enough. Add fruit if the drink calls for it. Fruit takes a couple more turns of the muddler
● When your kitchen, or bar smells minty, or herby, you are done.
If your herb is shredded or crushed, you muddled to long, and you are going to have a bitter drink. This is due to the release of Chlorophyll.
Until the 90's the muddler was most commonly used for an Old Fashioned.
A few other drinks requiring a muddler:
● Mojitos - made with light rum
● Caipirinha- made with Cachaca
● Caipirosa- made with vodka
● Mint Julep - Made with bourbon or whiskey
● Old Fashioned - Made with whiskey or brandy
☆☆☆☆☆☆ Always muddle with no ice. Sugar is good for muddling, it helps to masticate the herbs. If you want a clean drink you can pour it through a cocktail shaker or sieve.
